PASTEL DE CALABAZA(PUMPKIN PIE)

Pastel de calabaza


1 masa para pastel de 9 pulgadas sin cocinar

2 huevos, ligeramente batidos

2 tazas de puré de calabaza o una lata (16 onzas)

de calabaza compacta sólida

1 taza colmada de azúcar morena

1 1/2 cucharadita de canela

1/2 cucharadita de sal

1/2 cucharadita de nuez moscada

2 cucharadas de mantequilla o margarina, derretida

1 taza de leche descremada

1 cucharadita de extracto de vainilla

Precaliente el horno a 425F.

En un tazón grande agregue los ingredientes del relleno en el orden que aparecen.

Mezcle bien con batidora eléctrica o a mano.

Vierta sobre la masa. Hornee durante 15 minutos. Luego reduzca la temperatura

del horno a 350F y siga horneando durante unos 45 minutos más o hasta que

cuando inserte un cuchillo en el centro de la preparación éste salga limpio.

Deje enfriar un poco y sirva tibio o frío.

PUMPKIN PIE
 1 dough 9-inch pie, uncooked
 2 eggs, lightly beaten
 2 cups mashed pumpkin or a can (16 ounces)
compact solid pumpkin
 1 cup brown sugar filled
 1 1 / 2 teaspoon cinnamon
1 / 2 teaspoon salt
 1 / 2 teaspoon nutmeg
 2 tablespoons butter or margarine, melted
 1 cup skim milk
 1 teaspoon vanilla extract

 Preheat oven to 425F.
 In a large bowl add the filling ingredients in order given.
 Mix well with electric mixer or by hand.
 Pour over dough.  Bake for 15 minutes. Then reduce the temperature
 the oven to 350F and continue baking for about 45 minutes or until
 when knife inserted in center comes out clean preparation.
 Cool slightly and serve warm or cold.

SOPA DE CALABAZA

2-1/2 libras de calabaza, pelada y picada
3cucharadas de aceite de oliva
1 taza de cebolla picada
 2 dientes de ajo, bien picado
2 latas (14-1/2 onzas cada una) de caldo de pollo
 1/2 taza de crema agria  (Sour Cream)
 8 tajadas de tocino (tocineta) ( Bacon), cocido, desmenuzado

Calentar el aceite en una cacerola pesada de tamaño grande a fuego medio.
Agrega la cebolla y el ajo; cocínalos, mientras los revuelves, durante 4 minutos o
hasta que estén tiernos.
Agregar la calabaza y el caldo. Haz que hierva. Reduce el fuego a bajo; cocina
estos ingredientes durante 40 minutos.
Vertir la sopa por tandas dentro del vaso de la licuadora; pon la tapa. Bátela
hasta obtener una consistencia homogénea. A cucharones, coloca la sopa dentro
de 7 tazones individuales. Completa cada una de las porciones con la crema agria
 y el tocino desmenuzado. Acompáñala con galletas  Crackers, si así lo deseas.
Toquecito adicional:
Para que quede un poco más picante, espolvorea cada una de las porciones con
pimienta roja molida (cayena).

PUMPKIN SOUP


 2-1/2 pounds pumpkin, peeled and chopped

 3 tablespoon olive oil

1 cup chopped onion

 2 cloves garlic, finely chopped

 2 cans (14-1/2 ounces each) chicken broth

1 / 2 cup sour cream
8 slices bacon cooked, crumbled



 Heat oil in heavy large saucepan over medium heat.

 Add onion and garlic and cook, while stirring, for 4 minutes or

 until tender.

 Add pumpkin and broth.  Let boil.  Reduce heat to low; Cook

 these ingredients for 40 minutes.

 Pour the soup in batches in the blender, put the lid. Blend
 until smooth.  With big spoon, place the soup into

 of 7 individual bowls.  Complete each of the portions with sour cream

 and crumbled bacon. . Join her with crackers, if desired.

 Additional bunt:

 To be a little spicier, sprinkle each portion with

 ground red pepper (cayenne).

FLAN DE CALABAZA (PUMPKIN FLAN )

FLAN DE CALABAZA


1 lata de leche condensada

1 lata de leche evaporada

4 huevos

1 1/4 tazas de calabaza (hervida, pelada y

majada y sin exceso de liquido)

1 taza de azucar (para el caramelo)

1/2 lima o limon

Batir bien los 4 huevos.

Agregar las dos leches, mezclar y al final añadir la calabaza

majada sin liquido.

Aparte en una sarten a temperatura mediana echar el azucar y

unas 4 o 5 gotitas de lima o agua y moverlo hasta que se disuelva

totalmente el azucar y que tenga un color doradito oscuro ( 7 minutos aprox.)

Pasar el caramelo al molde cubriendo todo el fondo y las paredes del molde.

Una vez que el azucar se haya secado, vertir la mezcla de huevos y leche.

Colocar el molde dentro de otro mas grande. Llenar este con agua hasta cubrir

3/4 partes del molde, mas pequeño. Esto es Baño Maria. Se coloca en el horno

por 45 minutos a 350 f, o hasta que al introducir un cuchillo, y este salga limpio.

Una vez que se enfrie, llevar a la nevera. Para sacarlo del molde, separar los

bordes con un cuchillo bien fino, se voltea en un plato grande y listo para comer!!!!!!!!!!!!
 
PUMPKIN FLAN

 1 can condensed milk
1 can evaporated milk
 4 eggs
 1 1 / 4 cups pumpkin (boiled, peeled and
 flock and no excess liquid)
 1 cup sugar (for caramel)
 1 / 2 lime or lemon

 Beat the 4 eggs.
 Add the two milks, mix and add the squash final
 flock without liquid.
 Apart in a skillet over medium heat and pour the sugar
 about 4 or 5 drops of lime and water and move to dissolve
sugar altogether and have a dark golden brown color (7 minutes).
 Pass the candy into the mold covers the bottom and sides of pan.
Once the sugar has dried, pour the egg mixture and milk.
 Place pan into a bigger one. Fill this with water to cover
 3 / 4 of the mold, but small.  This is a water bath. Place in oven
 for 45 minutes at 350 F or until knife inserted and comes out clean.
 Once cool, put into fridge. To unmold, remove the
 knife edges with a very fine, turns on a large platter and ready to eat !!!!!!!!!!!!

HISTORIA DEL SISIMITE( THE SISIMITE'S TALE)

"Al igual que sus parientes de las nieves, el yeti del Tíbet y

el bigfoot de EEUU y Canadá, el sisimite es otra de esas

criaturas que aparecen de la nada y desaparecen del mismo modo.

Según el investigador hondureño Jesús Aguilar Paz, el sisimite o

itacayo deambula por las altas montañas y habita en inaccesibles

cavernas, alimentándose de frutas silvestres, de la misma manera

que sus parientes cercanos de México y Argentina, el peludo y el

ucumar respectivamente.

"Estos monstruos secuestraban a mujeres, y se las llevaban a

sus cuevas. Se dice que de esta unión nacieron hombres-simio".

Aún se comenta en los pueblos de las montañas la historia de

una mujer que logró huir del escondite donde vivía con un sisimite.

Según cuentan, la criatura la persiguió cargando con los tres hijos

que habían tenido en común y enseñándoselos a la madre. Ésta logró

cruzar un río mientras la bestia, desde la otra orilla, le mostraba

a los pequeños para lograr atraerla. Al parecer, los intentos del

sisimite no surtieron efecto, de tal modo que, enfurecido, arrojó

a los niños al agua y perecieron ahogados.

El fraile italiano Federico Lunardi, uno de los más importantes

estudiosos de la cultura hondureña, asociaba esta criatura al

dios Chac de los mayas, "el que sostiene el cielo, el dios del agua".

Según Lunardi, la creencia popular sostiene que en el interior

de una de estas cuevas, en una pared, están grabadas "la mano con sus

dedos" y varias huellas que habían dejado los sisimites que acudían


a media noche a la caverna para afilar sus uñas en la roca.
THE SISIMITE'S  TALE

TABLETAS DE COCO(COCONUT TABLETS)

TABLETAS DE COCO


Ingredientes
1 o 2 libras de azucar
1/2 libra de coco rallado
1 1/2 taza de leche
2 palitos de canela

Preparación

Primero pone la olla a fuego medio
después agrega el coco con el azúcar,
revuelva por aproximadamente 10
minutos cuando el azúcar comienze a
tomar color, agregar la canela y la leche
muever hasta que la leche se combine bien
con el azúcar y el coco y cuando tome un
color café y se endure un poquito apague
la estufa y coloquelo en un tabla en forma
de un cuadrado y partir en cuadritos chiquitos
y deje enfriar. Y listo para comer!
 
COCONUT TABLETS

Ingredients

 1 or 2 lbs of sugar
1 / 2 pound of grated coconut
 1 / 2 cup milk
2 cinnamon sticks

 Preparation

First put the over medium heat,
then add the coconut and sugar,
 stir for about 10 minutes.
When the sugar begins to
 turn brown, add the cinnamon and milk,
  moves until well combined milk
 with sugar and coconut and if  take a
 brown and harden a bit; turn off
 the stove and place in a table as
of a square and diced from little ones
and cool.  And ready to eat!

VEGETALES MARINADOS(MARINATED VEGETABLES)

2 tazas de flores de brocoli
2 tazas de flores de coliflor
1 taza de habichuelas (frijoles en vainas)
2 tazas de zanahorias, rebanas en diagonal
1 taza de tomates, en cuadritos
1/2 taza de cebolla, picada.
1/3 de taza de mostaza dijon
1/3 taza de aceite de oliva
1/4 taza de vinagre de vino rojo (tinto)
1 cdta de azucar
1 cdta de cilantro
1/3 de taza de tiras de tomate desidratado
envasado en aceite
Sal y pimienta al gusto.

En una olla, ponga a hervir suficiente agua, cuando este
hirvieno coloque el brocoli, las habichuelas y las zanahorias,
cocinelas por 5 minutos. Escurra las verduras y enjuagelas
en agua fria, y escurralas.
Aparte en otra olla ponga a hervir suficiente agua, cuando
este hirviendo apague el fuego y coloque la coliflor, dejela
por 2 minutos, luego escurrala y enjuague con agua fria.
Pongalas en un recipiente grande. Agrege el tomate y la
cebolla.
En un recipiente pequeno agrege la mostaza, el aceite, el
vinagre, el azucar, el cilantro y la pimienta; agrege el tomate
desidratado.
Vierta el aderezo sobre las verduras; revuelva bien.
Antes de servir refrigere por lo menos 2 horas.

MARINATED VEGETABLES


2 cups broccoli florets
2 cups cauliflower flowers
1 cup of beans (beans in pods)
 2 cups carrots, sliced diagonally
1 cup tomatoes, diced
1 / 2 cup onion, chopped.
 1 / 3 cup Dijon mustard
 1 / 3 cup olive oil
1 / 4 cup red wine vinegar (red)
1 tsp sugar
1 tsp coriander
 1 / 3 cup dehydrated tomato strips
 packed in oil
Salt and pepper to taste.


 In a pot, boil enough water, when is boiling
place the broccoli, beans and carrots
cook 5 minutes.  Drain and rinse vegetables
in cold water and drain.
 Besides in another pot boil enough water, when
 is boiling turn off heat and place the cauliflower, leave
for 2 minutes, then drain and rinse with cold water.
Place in large bowl.Add the tomato and onion.
 In a small bowl add the mustard, oil, vinegar, sugar,
coriander and pepper, add the tomato  dehydrated.
 Pour dressing over vegetables, stir well.
Before serving, refrigerate for at least 2 hours.

PASTELITOS DE CARNE (BEEF PATTIES)

Ingredientes:

1/2 tasa de arroz cocido

3 papas cocidas cortada en cuadritos

1 lb. de carne de cerdo molida,

1 cebolla grande

3 dientes de ajo, machacados

1 chile dulce, picadito

2 tomates grandes

Sal y pimienta

1 copa de vino dulce

Vinagre al gusto

Achiote

aceite para freir

Para la masa:

4 tazas de harina de maiz

Sal y pimienta

Achiote

1 cucharadita de soda (polvo de hornear)

Primero se hace la masa de harina de maiz, la masa se prepara mezclando todos los condimentos señalados, debe quedar suave .Se cocina la carne molida con el vinagre, cebolla, dientes de ajo machacados, chile dulce picadito, tomates sal y pimienta, vino dulce, vinagre al gusto, achiote. La carne tiene que quedar muy gustosa. Mezclar papas, arroz cocido y carne. Aparte extienda porcione de la masa del tamaño de una dona en papel selofan para hacer las tortillas, luego ponga el ingrediete de relleno en el centro de la tortilla y proceda a doblarla como empanadas y freir en una fridera suficientemente grande con suficiente aceite, por ambos lados hasta, que queden doradita. Para comerlas use salsa de tomate picados, chiles, cebollas y repollo picado.



BEEF PATTIES

Ingredients:

1 / 2 cup cooked rice
3 potatoes, cooked diced
1 lb. ground pork,
1 large onion
3 cloves garlic, minced
1 bell pepper, chopped
2 large tomatoes
Salt and pepper
1 cup sweet wine
Vinegar to taste
Achiote
oil for frying
For the dough:

4 cups cornmeal
Salt and pepper
Achiote
1 teaspoon baking soda

First is the dough of cornmeal, the dough prepared by mixing all the ingredients listed. It should be smooth.
 Cook ground beef with vinegar, onion, garlic cloves, chopped peppers, tomatoes, salt and pepper, sweet wine, vinegar to taste, achiote. The meat has to be very tasty. Mix potatoes, cooked rice and meat.
Besides extending portions of dough the size of a donut  on wax paper to make the tortillas, then put the ingrediete of filling in center of tortilla and proceed to fold as patties and fry in a large enough Frideres enough oil for both side up, which are golden brown. Use to eat tomato sauce, chopped peppers, onions and cabbage.

YUCA CON CHICHARRON(Yuca with pork skin

2 lbs. de yuca
10 oz. de repollo picado
chicharron al gusto

Salsa:
1/4 de salsa de tomate
1 pizca de sal
1 pizca de pimienta y comino
2 cdas. de aceite vegetal
1 cubito de pollo
1 1/2 taza de agua caliente
cebolla al gusto

Como cocinar la yuca:
cocine la yuca en una olla, con suficiente agua.
introduzca un tenedor para saber si ya esta blanda.
luego agrege sal al gusto
deje cocinar por dos minutos mas.
bajela y bote el agua.
para la salsa:
coloque el aceite en una freidora, agregue cebolla y sofriala.
Anada la salsa de tomate, sal, pimienta, cominos, azucar, el cubito y deje sofreir.
Agregue el agua caliente y deje que hierva.
Sirva 8 oz. de yuca por plato, encima coloque el repollo, luego la salsa y el chichorron
 Buen provecho!!!
En todas las calles de las ciudades de Honduras se vende mucho la yuca con chicharron.
 
Yuca with pork skin
2 lbs. Cassava (yucca)
10 oz. chopped cabbage
chicharron to taste

Sauce:
1 / 4 tomato sauce
1 pinch of salt
1 pinch of pepper and cumin
2 tbsp. vegetable oil
1 cube chicken
1 1 / 2 cup hot water
onion to taste

How to cook cassava:
cook yuca in a saucepan with enough water.
insert a fork to see if it is already soft.
then add salt to taste
cook for two minutes more.
lower it and discard water.

for the sauce:
Place the oil in a fryer, add onion and saute.
Stir in tomato sauce, salt, pepper, cumin, sugar, cube and let the fry.
Add hot water and boil.
Serve 8 oz. cassava per dish, place the cabbage on top, then salsa and chichorron

HISTORIA DEL CADEJO
"En Honduras la leyenda del Cadejo aun permanece con mucha vigencia,
y hay numerosos relatos y escritos basados sobre el famoso "perro del
diablo".  Se trata de un perro enorme de color blanco y ojos rojos que
protege a los hombres cuando llegan a altas horas de la noche, sin
embargo el cadejo tiene un enemigo, el cadejo negro, un ser diabólico
que ataca y mata a las personas de dudosa moral, cuando ambos el
espíritu protector y el diabólico se encuentran comienza entre ambos
una lucha a muerte que normalmente da tiempo a la persona a huir.
El cadejo blanco como protector acompaña al hombre que trasnocha
hasta su casa lo hace muchas veces desde las sombras y sin dejarse ver,
normalmente se siente como un presencia que no puedes localizar.
Su finalidad es defender al borracho o trasnochador del cadejo negro.
El Cadejo Blanco al contrario es el antagonista del primer perro y el
protector de las personas que cruzan su camino con él. En los relatos y
testimonios contados también actua como guia para prevenir a las personas
de que se encuentren con el cadejo negro, así también las cuida por cierto
tiempo hasta asegurarse de que el lugar esta seguro. Al encontrarse ambos
seres, una terrible lucha se desata entre los dos, donde muchas veces por
invocación de poder santo el cadejo blanco derrota al negro y la que fuera
su victima vive para contar la historia.
El cadejo negro dependiendo de la cultura que enfoca la leyenda puede tener
dos fines, matar a las personas de dudosa moral a las que no puede defender
el cadejo blanco siempre a altas horas de la noche, o simplemente golpearle
 y aplastarle, en ambas creencias el cadejo nunca muerde (salvo en su lucha con
el cadejo blanco) y causa el daño golpeando y aplastando, debido a su gran
tamaño deja al hombre al que ataca como si hubiera recibido una paliza.
El Cadejo Negro se asocia con el mal, se cree que persigue a distancia a los
caminantes nocturnos, generalmente los que vienen de fiestas, festivales,
carnavales, juegos de azar o cantinas. Se caracteriza por tener un color
negro intenso, ojos rojos, una apariencia espectral con figura de cadenas y
un aura de malignidad que paraliza a quien sera su victima; usualmente
escoge a hombres jóvenes que hacen alusión a su gran valentía. Es capaz
de manipular su cuerpo para crecer (a manera de perro gigante) y ha surgido
la creencia de que es un demonio que toma la apariencia de un perro. "

Cadejo HISTORY

"La Siguanabana: una mujer hermosa, con aspecto de sirena, que aparece sentada a la orilla del río. Cuando un joven se le acerca, se descubre el seno y se lo ofrece: "toma tu teta, toma tu teta".dicen que es el fantasma de una mujer que se aparece en la noche en los rios a los hombres que viajan solos. A primera vista ella es una mujer hermosa, pero cuando el hombre se acerca ella se da la vuelta y se convierte en aborrecimiento horrible.
Según lo que cuenta la leyenda, todos los trasnochadores están propensos a encontrarla. Sin embargo, persigue con más insistencia a los hombres enamorados, a los Don Juanes que hacen alarde de sus conquistas amorosas. A estos, la Siguanaba se les aparece generalmente en cualquier estanque de agua en altas horas de la noche, o a orillas de ríos según otras versiones. La ven bañándose con guacal de oro y peinando su hermoso cabello negro con un peine del mismo metal, su bello cuerpo se trasluce a través del camisón.
Dicen las tradiciones que el hombre que la mira se vuelve loco por ella. Entonces, la Siguanaba lo llama, y se lo va llevando hasta un barranco. Así la Siguanaba se asustaría y se tiraría al barranco. Otras versiones también dicen que debe agarrarse de una mata de escobilla, y así, cuando ella tira de uno, al agarrase la víctima de la escobilla, ella siente que le halan el pelo. FLAN DE COCO(Coconut Flan)

Ingredientes
1 lata de leche condensada
2 medidas de la misma lata de leche común
5 huevos
1/2 taza de coco rallado
3/4 taza de azúcar para preparar caramelo

Modo de preparar
Preparación del flan. Semibatir los huevos.
Entibiar apenas la leche común y mezclarla con
la leche condensada.
Mezclar los huevos y el coco con la preparación anterior.

Caramelo:
Poner en una cacerola chica el azúcar y dos cucharadas
de agua.
Llevar al fuego y dejar sin mezlar hasta que los bordes
comiencen a oscurecerse.
Se retira, se mezcla rápidamente ( moviendo la cacerola )
y se vuelca sobre la budinera esparciéndolo por todo el envase.
Una vez solidificado se vuelca el flan y se lleva a cocinar a baño María
( con el agua caliente ) durante 50 minutos aprox. o hasta que al introducir
la punta de un cuchillo o un palillo éste salga húmedo pero limpio.
Una vez pronto se deja enfriar hasta que tome temperatura ambiente.
Luego, se lleva a la heladera durante unas horas. Si es toda la noche mejor.
Y recién se desmolda.

Coconut Flan
Ingredients
1 can condensed milk
2 measures of the same can of regular milk
5 eggs
1 / 2 cup shredded coconut
3 / 4 cup of sugar to make caramel
